- Bring the chicken to room temperature for a few minutes and rub with a little oil and seasoning.

- Bake for 18–22 minutes for a medium breast (about 180g), then rest for 5 minutes.
How to tell it's cooked
- Juices run clear when pierced at the thickest point.
- The meat is white throughout with no pink.
- A thermometer reads at least 75°C in the centre.
